Awesome Gluten-Free Fish Fry

Yummy fish fry!

Ingredients:

  • 1/2 cup corn flour (masa)
  • 1/2 cup corn starch
  • 1/2 tsp. baking powder
  • 1 tsp. garlic
  • 1 tsp. salt
  • 1/2 tsp smoked spanish paprika
  • 1/2 cup milk + 1 tblsp vinegar (mix this first and let sit 5 minutes)

Directions:

Mix dry ingredients in small mixing bowl.

Stir in milk (it may take slightly more milk than listed, but mix to the consistency of pancake batter). Allow it to sit for a couple of minutes.

Coat fish with plain corn masa and then coat in batter.

Deep fry in canola oil for 4 to 5 minutes until golden brown 175C/375F

Cut up fresh onions to coat with remainder of batter for an added bonus!! (coat rings lightly and fry for about 3 minutes)
