Grandma's No Fuss Pumpkin Dessert

Grandma's holiday favorite!

Grandma liked things simple. She made this great pumpkin dessert all the time instead of pumpkin pie :)

Makes a 9x9 pan.

Ingredients

Filling:

  • 1 box instant vanilla pudding (small size box)
  • 1/2 tub of cool whip (small container)
  • 1 can of pumpkin (small can)
  • 1 tsp. pumpkin pie spice or even just cinnamon...I think she actually used cinnamon...add more to your liking.

Mix all that with a mixer.

Spread it on your favorite graham cracker crust. I know hers wasn't baked...maybe something like this...she didn't measure...

  • 1 1/2 cups crushed gluten-free cinnamon rice chex
  • 1/2 cup butter (1 stick)
  • 2 Tablespoons sugar

Combine and the press into a pan or a flat plastic container with a lid.

Top with the remaining cool whip and a scant sprinkling of cinnamon and/or some graham crumbs and chill for a bit.
