4 cups pitted and chopped tart cherries
1 box Sure Jell Fruit Pectin
1/2 tsp. Butter
4-3/4 cups sugar
1/4 tsp. Almond Extract
Prepare jars and lids.
Prepare the Fruit.
Wash and pit the cherries. Finely chop or grind the fruit.
Measure exactly 4 cups prepared fruit into large pot.
Measure exact amount of sugar into a separate bowl.
Stir Sure Jell Pectin into fruit.
Add Butter to fruit mixture to reduce foaming.
Bring mixture to full rolling boil on high heat, stirring constantly.
Stir in sugar quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly.
Remove from heat. Skim off any foam.
Ladle into prepared jars.
Process in hot water bath or by turning upside down for 5 minutes.
Let stand for 24 hours at room temperature.
