Cooking the Jam

Measure exactly 4 cups of chopped cherries into a large pot.

Next measure 4 and 3/4 cups of sugar into a separate bowl.
It is important to have the exact amount so that the jam sets properly.
Measure this ahead of time because you will be adding this quickly and timing is important.

Next stir the fruit pectin into the fruit.
Add 1/2 tsp. of Butter to reduce foaming.

Now bring this mixture to a full rolling boil on high heat, stirring constantly.
(A full rolling boil is one that doesn't stop bubbling when stirred)

Next stir in the sugar all at once.
Also add 1/4 tsp. of Almond Extract at this time, if desired

Return to a full rolling boil and boil exactly 1 minute, stirring constantly.
Then remove from the heat and skim off any foam.
